Preparation steps

1.

Wash scallops and pat dry with paper towels. Cut scallops into cubes and mix with 1 tablespoon lemon juice and the olive oil. Season with salt and pepper.

Rinse tomatoes, pat dry, core, and chop. Chop olives. Strip basil leaves from stems and chop. Peel and finely chop shallots. Mix pine nuts with tomatoes, olives, shallots, and basil. Season with remaining lemon juice, salt, and pepper. In 4 glasses, alternately layer scallop tartare and tomato mixture. Garnish with basil.
