8 Scallop (very fresh)
5 Leeks
25 grams black Truffle (more or less, to taste)
2 Tbsps lemon juice
2 Tbsps olive oil
salt

Preparation steps

Rinse scallops, pat dry and chop into very small pieces. Rinse chives, shake dry and cut into small rings. Grate truffle into thin slices and chop about 3 slices. Combine scallops with chopped truffles, chives, lemon juice and oil. Season with salt and pepper and place into small molds (about 7 cm in diameter) (approximately 3 inches). Invert onto appetizer plates and garnish with truffle slices. Serve immediately.
