Preparation steps

1.

Slice the scallops in half transversely and place each half on a cracker. Mix the cream cheese and mayonnaise together until smooth and season with salt and pepper. 

2.

Transfer the cream cheese mixture to a piping bag affixed with a closed star tip and pipe rosettes onto the scallops. Garnish each canapé with half a teaspoon of caviar and serve.
