- 12 scallions
- 3 Tbsps olive oil
- 1 tsp chopped thyme
- salt
- freshly ground pepper
- 40 grams softened butter
- 40 grams Gorgonzola
- white peppers
- 1 tsp lemon juice

Preparation steps

Finely mash the gorgonzola with a fork and mix thoroughly with the butter. Season with lemon juice, salt and white pepper. Butter the scallion, halve lengthwise and brush with olive oil. Season with thyme and let it sit for about 10 minutes.

On a grill or the stove, grill the scallion for about 8-10 minutes (occasionally sprinkling with a little oil) and season with salt and pepper. Arrange the grilled scallion on plates to form nests and serve topped with the gorgonzola butter.
