- 1 small duck leg (about 1.4 kg)
- salt
- peppers
- 2 Tbsps olive oil
- 300 grams scallions
- 200 milliliters dry white wine
- 250 milliliters chicken stock
- 4 sprigs thyme

Preparation steps

Rinse duck and pat dry. Divide into quarters and remove skin. Season with salt and pepper. Heat oil in a pan and sear duck on all sides until golden brown. Remove from the pan. Rinse and dry scallions, cut into large rings.

Saute scallions briefly in the same pan and deglaze pan with wine. Add broth and return disk to the pan, add thyme and simmer, covered, for about 1 hour on low heat. Add more broth as needed and turn meat over occasionally. Arrange on plates and serve.
