- 3 Tbsps sunflower oil
- 4 shallots (finely sliced)
- 2 cloves garlic cloves (chopped)
- 2 red chili peppers (deseeded and finely chopped)
- 25 ozs Squid (with tentacles, cleaned and cut into large pieces)
- 2 Tbsps soy sauce
- 1 Tbsp Fish sauce
- 1 Lime (juiced)
- 1 tsp sugar
- Lime leaves (to garnish)

Preparation steps
1.
Heat the oil in a wok until smoking then add the shallot, garlic an chilli.
2.
Stir fry for 2 minutes then add the squid pieces and continue cooking over a high heat for 3 minutes or until the squid is just tender. Do not overcook or the squid will become tough.
3.
Add the soy sauce, fish sauce, lime juice and sugar, stir quickly and serve immediately.
