2 Tbsps blanched Pistachio
1 Zucchini
600 grams Salmon (skinless)
1 Tbsp Lime juice
1 garlic clove
2 Tbsps olive oil
salt
freshly ground peppers
150 milliliters dry white wine

Preparation steps

1.

Chop the pistachios and dry toast until golden brown in a frying pan. Remove and set aside.

Rinse the zucchini, trim, quarter lengthwise and thinly slice.

3.

Rinse the salmon, pat dry, cut into bite-sized cubes and sprinkle with lime juice.

4.

Peel the garlic, chop finely and sweat with the pistachios in 2 tablespoons oil. Add the zucchini and salmon and season with salt and pepper. Sauté briefly. Deglaze with the white wine, season with salt and pepper and simmer over medium heat for 5 minutes. Serve on warmed plates.
