- 4 Sausage
- 2 Tbsps olive oil
- 4 carrots (cut into sticks)
- 2 Red onions (sliced)
- 2 garlic cloves (finely chopped)
- 2 Tbsps tomato puree
- ⅞ cup Red wine
- ⅞ cup Veal stock
- 9 ozs cherry Tomatoes (halved)
- 1 ½ cups White bean (tinned; drained)
- 2 sprigs rosemary (needles roughly chopped)
- ½ tsp Juniper Berry (crushed)

Preparation steps
1.
Fry the sausages in a pot in hot oil until brown. Remove them from the pot and add the carrots, onions and garlic and fry for 2-3 minutes. Then stir in the tomato puree.

Quench with the red wine and reduce slightly. Add a little of the veal stock, the tomatoes and the beans.
3.
Add the rosemary and the juniper berries and simmer for approx. 25 minutes stirring occasionally. If necessary add some more stock.
4.
Towards the end of the cooking time replace the sausages in the pot and allow to steep for a few minutes. Season with salt and ground black pepper.
