Sausage-Cheese Salad with Egg

- ½ bunch Chives
- 200 grams Regensburger sausage
- 200 grams Thuringian sausage
- 1 red Hungarian wax pepper
- 2 onions
- ¼ pc Cucumber
- 2 Tomatoes
- 4 Tbsps vegetable oil
- 2 Tbsps White vinegar
- 1 tsp medium-hot Mustard
- salt
- freshly ground peppers
- 2 hard-boiled eggs
- 150 grams Tilsit cheese (one piece)
Preparation steps
Rinse the chives, shake dry and cut into small rings. Remove the casings from the sausage and cut into thin slices. Rinse the pepper, remove the seeds and cut into thin rings. Peel the onions and also cut into rings. Peel the cucumber, cut in half lengthwise, remove the seeds and cut into thin strips. Blanch the tomatoes, rinse with cold water, peel, quarter, core and cut thin wedges.
Mix the oil with the vinegar and the mustard and season with salt and pepper. Toss the sausage with the remaining salad ingredients, mix in the vinaigrette and let marinate, covered, for 30 minutes in the refrigerator. Peel the eggs and cut into eighths. Remove the rind from the cheese and cut into thin strips. Fold together with the eggs into the sausage salad and serve on a plate.
