- 7 ozs waxy potatoes
- 7 ozs Celery root
- 7 ozs carrots
- 7 ozs Rutabaga
- 7 ozs Green cabbage
- 1 onion
- 2 Tbsps vegetable oil
- 7 ozs pureed Tomatoes
- 6 cups Vegetable broth
- 10 ozs Sausage (such as Cabanossi)
- salt
- freshly ground peppers
- ½ tsp Caraway
- 2 Tbsps scallions
Preparation steps
1.
Peel potatoes, celery root, carrots and rutabaga, rinse and cut into narrow strips. Trim cabbage, rinse and also cut into strips.

Peel the onion, chop finely and sauté until translucent in a pot with oil. Add prepared vegetables, sauté briefly and pour the broth. Stir in the pureed tomatoes and simmer for about 20 minutes over medium heat.
3.
Cut the sausage into slices and add to the soup 10 minutes before end of cooking. Season with salt, pepper and caraway seed and serve sprinkled with chopped chives.
