- 500 grams Chicken breasts (skinless)
- salt
- freshly ground peppers
- 2 Tbsps Corn oil
- 3 Tbsps Cashews
- 2 red Bell pepper
- 1 ripe Mango
- 4 large Lettuce (such as iceberg Lettuce)
- For the dressing
- 250 grams Natural yogurt
- 3 Tbsps Mayonnaise
- 2 Tbsps Orange juice
- 8 slices Toast
- 4 Tbsps Coconut flakes
- 1 bunch Basil
Preparation steps
Rinse the meat and pat dry. Season with salt and pepper, and sauté in the oil until golden brown. Reduce the heat, and continue cooking until done. Toast the cashews in a dry pan, then remove from the heat and set aside.
Rinse and halve the peppers. Remove the seeds and julienne. Peel the mango, and thinly slice the fruit away from the stone. Rinse and dry the lettuce.
For the dressing, mix the yogurt with the mayonnaise and orange juice. Stir until thoroughly combined, and season to taste with salt and pepper. Remove the chicken from the pan, and cut into strips.
Top 4 slices of the bread with one leaf of lettuce, some mango slice, peppers, and chicken strips. Top with the nuts, coconut flakes, and basil leaves. Drizzle with the dressing, and top with the remaining slices of bread. Cut in half diagonally and serve immediately.
