4 Veal steaks (each 160 grams)

4 slices air-dried, Italian ham
30 grams butter

Preparation steps

1.

Pound the plate of veal steaks flatter with a meat mallet and then cut in half crosswise. Season with salt and pepper. Trim, rinse and slice the figs. Halve the ham slices.

2.

Top each veal half with 1-2 fig slices and half a slice of ham. Fold over this filling and secure with toothpicks.

3.

Heat the butter in a pan over medium heat and cook saltimbocca on each side for 3-5 minutes. To serve, remove the toothpicks, distribute the saltimbocca on plates and garnish with spinach leaves.
