1 bunch scallions
2 Tbsps chopped fresh oregano
200 grams cream cheese
salt
freshly ground peppers
1 can Salsa verde (about 200 grams)
2 Tbsps chopped fresh cilantro
600 grams skinless, boneless Salmon
1 Red chili pepper
4 Tbsps vegetable oil
8 Wheat tortillas
1 sm can Kidney beans (about 400 grams)
½ tsp ground Cumin

Preparation steps

1.

Trim, rinse and thinly slice the white and light green parts of the scallions. Mix the cream cheese with the scallions and oregano and season with salt and pepper. Stir in the cilantro and the salsa verde.

Cut the salmon into 2 cm cubes. Core and finely chop the chile pepper.

Heat the oil in a pan. Saute the chile pepper and salmon 3-4 minutes. Remove and keep warm. Warm the tortillas. Heat the drained beans and season with cumin, salt and pepper. Spread 2 tablespoons cream cheese on each tortilla, top each with 2 tablespoons beans and salmon, roll the tortillas to form wraps, and secure with wooden sticks. Garnish the open sides with salsa verde and cilantro and serve immediately.
