700 grams Salmon (skinless)
2 sprigs Lemongrass
2 Red chili peppers
4 shallots
2 garlic cloves
2 sprigs Thai basil
100 grams button Mushroom (brown)
100 milliliters fish stock
2 Tbsps Fish sauce
4 Tbsps Lime juice
1 Tbsp cane sugar
1 tsp freshly ground white peppers

Preparation steps

1.

Rinse salmon, pat dry and cut into four equal pieces. Rinse  lemongras and cut white part into rings. Rinse chile peppers and halve, remove seeds and ribs. Peel and chop shallots and garlic.

Rinse basil, shake dry and pluck off leaves. Clean mushrooms and slice. Combine shallots, garlic, chille pepper and lemongrass in a mortar and crush.

Combine fish stock, fish sauce, lime juice and sugar in a wok and bring to a boil. Add spiced mixture and simmer for about 1 minute. Add mushrooms and salmon and cook until fish is done. Arrange fish decoratively on plates and season with freshly ground pepper. Serve.
