Scrub the lemons with water, cut in half and squeeze out the juice. Pour the lemon juice into a jug.
Use a vegetable peeler to remove the lemon zest in strips, leaving the white pith on the lemon flesh.
Put the lemon zest into the jug.
Trim off the base and top of 1 lemongrass stem, finely slice the remainder. Put the sliced lemongrass into the jug.
Add the sugar and pour over 600 ml boiling water. Cover and leave overnight.
Stir and taste for sweetness. Add more sugar to taste. Strain the lemonade into 2 glasses.
Add several ice cubes and garnish with a lemon grass stem and mint sprig in each glass.
