1 Tbsp lemon juice
2 Tbsps medium-hot Whole grain mustard
3 Tbsps soft butter
1 bunch mixed Fresh herbs (approx. 100 g e. g. basil, parsley, dill...)

3 Tbsps clarified butter
½ tsp flour
2 Tbsps pink peppercorns
½ cup Sour cream

1 Small pot, 1 Mixing bowl, 1 Tablespoon, 1 Hand mixer, 1 Kitchen towel, 1 Peeler, 1 Small knife, 1 Box grater, 1 Measuring cups, 1 Teaspoon, 1 Cutting board, 1 Baking sheet, 1 Parchment paper, 1 Fork

Preparation steps

Preheat the oven to 160°C.

Sprinkle the salmon fillets with lemon juice. Mix the butter with the mustard. Wash the herbs, shake dry and chop finely. Mix with the butter and mustard and season with salt and pepper. Spread the mixture on the salmon fillets and wrap in aluminium foil. Then put into the preheated oven for about 20 minutes. Open the aluminium foil for the last 5 minutes and grill the top.

Wash, peel and slice the potatoes. Then cook in boiling, salted water for 20-25 minutes. Drain well. Peel, halve and slice the onions. Heat the butter in a frying pan and fry the onions until golden brown. Add the peppercorns, fry briefly, then dust with flour and cook until thickened slightly. At the same time heat the clarified butter and fry the potatoes. Mix with the onion mixture. Arrange the salmon on plates with the fried potatoes and onions and serve sprinkled with sour cream.
