4 Salmon cutlets (180-200 grams each)
salt
freshly ground peppers
2 Tbsps vegetable oil
1 garlic clove
1 sprig parsley
1 sprig Basil
2 Chives
1 sprig Dill
125 grams butter
½ tsp Lemon peel
1 Tbsp freshly grated Parmesan
80 grams breadcrumbs
1 untreated lemon (cut into wedges)

Preparation steps

1.

Rinse the salmon steaks, pat dry and season with salt and pepper. Sauté in a pan with hot oil on all sides until browned, remove from pan and place on a parchment paper-lined baking sheet.

Preheat the grill. Peel the garlic. Rinse herbs, shake dry and finely chop the leaves.

Melt the butter in a pan. Pass garlic through a press into the pan and cook until translucent. Add the herbs, lemon zest, cheese and breadcrumbs, mix well and season with salt and pepper. Spread the mixture onto the salmon steaks and broil until golden brown under the preheated oven broiler, watching carefully. Transfer steaks to a preheated serving platter and serve with lemon wedges.
