- 2 Frozen puff pastries (sheets)
- 1 egg white
- 2 tsps grated Horseradish (from a jar)
- freshly ground pepper
- 50 grams thinly sliced Smoked salmon
- 50 grams grated Gruyere
- 50 grams chopped Pistachio
- 1 egg yolk
- 1 Tbsp milk
Preparation steps

Thaw puff pastry according to the instructions. Roll into a rectangle.

In a bowl, stir the egg white with the horseradish, and season with pepper to taste. Brush over the puff pastry. Arrange the smoked salmon on top of the puff pastry. Sprinkle 2/3 of the cheese and pistachios on top. Cut into 1 cm (approximately 1/4 inch) strips and roll into a pinwheel.

Place on a parchment-lined baking sheet. In a bowl, whisk the egg yolk with the milk, and brush over the pinwheels. Sprinkle with the remaining cheese and pistachios. Bake in a 200°C (approximately 390°F)(gas mark 3, convection: 180 degrees) oven until golden, about 12-15 minutes.
