2 pcs Salmon (each 180 grams, skinned and boned)
1 large lemon

3 Tbsps butter
400 grams Spinach
4 Tbsps breadcrumbs
1 Tbsp mixed, chopped Fresh herbs (such as parsley, dill, etc.)

Preparation steps

1.

Rinse spinach, trim and blanch in a pot with boiling salted water, then drain, rinse with cold water and drain. Remove approximately 1 tablespoon spinach and finely chop.

2.

Cut lemon in half and squeeze juice from 1 half. Peel other half and cut into thin slices. Finely grate half of lemon peel.

3.

Press spinach to remove liquid and loosen again. Heat 1 tablespoon butter in a pan, fry the lemon slices and spinach until resulting liquid has evaporated and season with salt, pepper and a little lemon juice. Keep warm.

4.

Prepare salmon fillets as necessary, sprinkle with lemon juice and season with salt and pepper.

Heat 1 tablespoon butter in a pan and fry salmon fillets on each side for about 2 minutes. Remove salmon from the pan and put in a baking dish. Preheat the oven broiler.

6.

Melt butter in a small pan, add breadcrumbs, lemon zest, chopped spinach and herbs, mix well and season with salt and pepper. Spread breadcrumb mixture over salmon and cook under the oven broiler, watching carefully, until golden brown.

7.

To serve, spread spinach with lemon slices on warmed plates and place baked salmonon top.
