1 fresh, english Cucumber (rinsed and trimmed)
freshly ground White pepper (to taste)
2 Tbsps unsalted butter (softened)
8 slices marbled, light Rye bread
2 Tbsps unsalted butter (softened)
4 ozs smoked Salmon (thinly sliced)

Preparation steps

1.
Slice the cucumber as thinly as possible. Lay the sliced cucumbers in a single layer on paper towels and blot dry with additional paper towels. Sprinkle to taste with white pepper.
2.
Spread a thin layer of butter on one side of each slice of bread. Place a layer of cucumbers over the buttered side of 4 slices of bread. Top with a layer of sliced salmon, followed by another layer of cucumbers. Top with each sandwich with remaining bread slice, butter side down. Cut each sandwich in half diagonally.
3.
Transfer sandwiches to serving plates and serve.
