10 ozs Wild herb salad mix (such as Young chard, chicory, celandine)
1 garlic clove
1 shallot
2 Tbsps lemon juice
2 Tbsps white balsamic vinegar
1 tsp honey
4 Tbsps olive oil

Preparation steps

1.

Rinse, trim, and thinly slice the radishes. Rinse, halve, and thinly slice the cucumber. Rinse and halve the tomatoes. Peel the beets, and cut 4 lengthwise notches with an encasing knife. Peel and thinly slice the carrots. Rinse the wild herbs, and dry on paper towels.

For the dressing, peel and finely chop the shallots and garlic. Mix both with the lemon juice, vinegar, honey, and oil. Season to taste with salt and pepper.

Arrange all the ingredients on plates, and drizzle with the dressing. Garnish with daisies, if you'd like, and serve.
