Salad with Tortellini
Cook tortellini in boiling salted water according to package directions and drain. Rinse and drain.
Rinse cucumber and cut into thin slices.
Rinse radishes and cut into thin slices.
Rinse tomatoes and cut into quarters. Remove seeds and cut into thin strips.
Rinse lettuce and spin dry.
Mix vinegar, mustard, salt and pepper. Add oil and toss dressing with salad ingredients (except the lettuce). Cover and refrigerate for about 30 minutes to infuse.
To serve, spread the lettuce on plates and top with tortellini salad.
