- 500 grams Tortellini with ricotta filling
- 1 bunch scallions
- 500 grams Plum tomato
- 250 grams Mozzarella
- 2 bunches Basil
- 1 bunch parsley
- 200 grams Crème fraiche
- 2 Tbsps Mayonnaise
- 5 Tbsps balsamic vinegar
- 4 Tbsps olive oil
- salt

Preparation steps

Cook the tortellini in boiling salted water according to package directions. Drain and rinse with cold water. Mix with 3 tablespoons balsamic vinegar and olive oil. Cover and marinate for 30 minutes. Rinse scallions, cut off ends and cut into thin rings. Rinse tomatoes, cut in half, remove the seeds and cut into eighths. Cut mozzarella into cubes.

Rinse parsley and basil and cut the leaves into thin strips. Mix creme fraiche with mayonnaise and 4 tablespoons mozzarella. Season with salt and pepper. Mix in remaining vinegar. Combine tortellini, scallions and mozzarella mix. Stir in herbs and drizzle with cream mixture to serve.
