- 400 grams Tortellini (cheese filled, finished product)
- freshly ground peppers
- 2 Tbsps vegetable oil
- 150 grams zucchini
- 150 grams cooked Smoked pork chop
- 1 red onion
- 1 Pickle
- 1 bunch parsley
Cook tortellini in plenty of salted boiling water until al dente, according to package instructions. Drain, rinse with cold water and toss with 1 tablespoon oil.
Rinse, trim and cut zucchini into thin slices. Cook zucchini in 1 tablespoon oil. Season with salt and pepper, remove from pan and let drain.
Cut Kassler sausage into 1 cm (approximately 1/2 inch) cubes. Peel onion and cut into rings. Finely dice cucumber. Rinse parsley and coarsely chop leaves.
Whisk together broth, mustard and vinegar. Season with salt, pepper and sugar and whisk in oil until emulsified.
Combine tortellini with zucchini, Kassler sausage, onion, cucumber and parsley. Add dressing and toss to combine. Let marinate about 15 minutes before serving.
