- 500 grams tri-color Tortellini (with cheese filling)
- 5 Tbsps White vinegar
- 3 Tbsps olive oil
- 125 grams Salami (finely diced)
- 125 grams Emmentaler cheese (finely diced)
- 70 grams black Olives (pitted, chopped)
- ½ bunch Basil (finely chopped)
- salt
- freshly ground peppers
- 1 pinch sugar

Preparation steps
1.
Cook tortellini for about 10 minutes in boiling salted water. Reserve 1/2 cup of the pasta water. Drain pasta and rinse with cold water.

Mix sugar, salt, pepper, vinegar and 1/2 cup of the pasta water together. Add olive oil. Stir in basil, salami and cheese. Mix all ingredients together and let rest about 1 hour in the refrigerator before serving.
