1 ripe Avocado
2 tablespoons lemon juice
3 tomatoes
4 nice Lettuce
1 tablespoon White vinegar
1 teaspoon balsamic vinegar
½ teaspoon Mustard
1 pinch sugar
salt
freshly ground peppers
2 tablespoons olive oil
2 Chervil (for garnish)

Preparation steps

1.

Peel and halve the avocado. Remove the seed and finely dice. Drizzle the avocado immediately with lemon juice. 

2.

Blanch the tomatoes in boiling water for a few seconds. Remove the tomatoes from the water and peel. Cut into quarters, remove the core, and finely dice. 

3.

Mix the tomatoes with the avocado, then season to taste with salt and pepper.

Rinse the lettuce, pat dry, and tear into small pieces.

Mix both of the vinegars. Gradually incorporate the oil, whisking constantly. Season to taste with salt, pepper, and sugar. 

6.

Arrange the lettuce leaves on plates, then drizzle with the dressing. Place half of the avocado mixture in a cup, then turn the cup over onto the lettuce. Repeat the process again with the remaining plate. Garnish with parsley and serve.
