200 grams lamb's lettuce
1 cup Broth
1 tsp Mustard

2 Tbsps Vinegar
4 Tbsps vegetable oil
1 shallot
1 smaller Apple
100 grams cooked ham
2 Tbsps scallions

Preparation steps

1.

Peel, rinse and coarsely cut potatoes. Cook in boiling salted water about 25 minutes, drain and while still hot press through a ricer.

2.

Trim, rinse and spin dry the lettuce.

3.

Mix the potatoes with the hot broth to a creamy, smooth sauce. Season with hearty mustard, salt, pepper, 1/2 teaspoon sugar, vinegar and oil.

4.

Peel the shallot and apple and rub in the sauce and stir.

5.

Cut the ham into thin strips.

6.

To serve, arrange the lamb's lettuce in bowls. Top with potato dressing, ham and chives.
