- 1 small Kohlrabi
- ½ handful Chives
- 200 grams Spanish ham (such as Serrano)
- 5 Tbsps olive oil
- 3 Tbsps White vinegar
- salt
- freshly ground peppers
- 1 pinch sugar

Preparation steps

Cut out hard stalks from endives and separate leaves. Rinse and chop coarsely. Peel kohlrabi and cut into sticks. Rinse chives, shake dry and cut into small rings. Heat 1 tablespoon of oil in a pan and cook ham until crispy. Drain on paper towels and tear into pieces. Whisk the rest of oil with vinegar and chives, season with salt, pepper and sugar. Add 1-2 tablespoons of water to the dressing, if needed. Toss endives and kohlrabi wth the dressing in a bowl. Arrange on plates and serve sprinkled with ham.
