350 grams Whole Grain Rye Flour
150 Rye berries
250 grams Whole wheat flour
5 grams Dry yeast
50 grams Molasses
100 grams liquid Sourdough (from the health food store)
2 Tbsps rough Bread spice
1 tsp salt
vegetable oil (for loaf pan)
Pastry flour (for working surface)

Preparation steps

Mix rye flour, rye wholemeal and whole wheat flour in a bowl and create a well in the middle. Pour yeast into the well, mix with molasses and 150 ml (approximately 5 ounces) of lukewarm water. Add sourdough, bread seasoning and salt. Add about 250 ml (approximately 1 cup) of water and knead into a firm dough. Cover and let rest about 1 hour.

Oil the loaf pan with vegetable oil.

Knead dough well on a floured work surface well and shape into an oblong loaf. Place dough into the oiled loaf pan. Let rest for about 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Sprinkle dough with water and cover with aluminum foil. Bake in the preheated oven for about 30 minutes. Remove the aluminum foil and bake for another 40-50 minutes.

6.

Remove bread from oven and allow to cool briefly before removing from the loaf pan. Remove bread from loaf pan and leave to cool.
