- 2 Corn (already pre-cooked, packed)
- 1 red Bell pepper
- 4 scallions
- salt
- peppers
- olive oil
- 2 tsps dried thyme
- Wooden skewer
- For the dip
- 250 grams Crème fraiche
- 1 bunch Chives (thinly sliced)
- 4 Radish (chopped)
- 2 tsps grated organic Lemon peel
- salt
- peppers
- 1 tsp ground ginger
- 1 pinch cayenne pepper

Preparation steps

Preheat the oven to 200°C (approximately 400°F).
Thickly slice the corn on the cob. Rinse the pepper, halve lengthwise, remove the seeds and white ribs and cut into large pieces. Rinse the scallions and remove the green parts. Thread the corn, bell pepper and scallions on wooden skewers.
Brush the skewers with 2-3tablespoons oil, season with salt and pepper and roast 10-15 minutes.

For the dip: Mix together the creme fraiche, chives, radishes, lemon zest, ground ginger and cayenne, season with salt and serve with the warm skewers.
