- For the steaks
- 2 tablespoons vegetable oil
- 4 Pork saddle steaks (each about 100 grams)
- 1 garlic
- 2 sprigs oregano
- 1 Red chile pepper
- freshly ground pepper
For the steaks, heat oil and saute for 8 to 10 minutes. Peel garlic. Strip oregano leaves from stems. Rinse chile pepper, remove seeds and chop finely. In the final minutes of cooking, pass garlic through a garlic press and add to steaks along with oregano and chile pepper. Season with salt and pepper to taste. Keep warm.
For the salad, rinse arugula and spin dry. Mix vinegar with salt, pepper and olive oil. Stir in arugula. Serve steaks with salad and a thinly planed slice of Parmesan.
