butter (for the roasting dish)
2 ⅔ cups waxy potatoes
1 cup smoked Bacon (cut into lardons)
2 Pear (quartered, cored and cut into wedges)
1 Tbsp Sage
1 chicken (ready to cook, approx. 3-4 lbs, split into 8 pieces)
2 Tbsps olive oil

Preparation steps

Heat the oven to 400°F, and grease a roasting dish with butter.

Cook the potatoes in boiling salted water for around 20 min. Drain, leave to cool slightly then peel and chop.

Fry the bacon in its own fat and then add the potatoes. Fry until golden then remove from the heat.
4.
Place the pears, potatoes, bacon and the sage leaves in the prepared roasting dish and place the chicken on top. Season with salt and ground black pepper and drizzle with some oil. Roast for around 30 min. Remove from the oven and arrange on a serving platter.
