1 kilogram turkey breasts (prepared, ready for cooking)

1 kilogram tart Apple (such as boskop)
1 lemon
1 handful fresh thyme
250 milliliters Cider
butter (for the pan)
250 milliliters Chicken broth
1 bay leaf
1 Tbsp Juniper berries

Preparation steps

Preheat the oven to 160°C (approximately 350°F).

Rinse turkey breast, pat dry, place on a work surface, pound flat and season on both sides with salt and pepper.

Rinse apples, peel, remove core and cut 3-4 apples into 2 cm (approximately 1 inch) pieces. Squeeze juice from lemon and drizzle over apples in a bowl. Rinse thyme, shake dry, pluck leaves from stem and mix with diced apples. Add 100 ml (approximately 3 1/2 ounces) of cider to the bowl and season with salt and pepper. Add apple mixture to the center of turkey and roll turkey breast around apples. Tie rolled turkey breast with kitchen twine and place in a greased roasting pan. Pour remaining cider and broth over turkey breast and cook in the preheated oven for about 45 minutes. Occasionally pour roasting liquids over turkey breast during cooking time.

In the meantime, cut remaining apples into quarters and remove core. Spread remaining apples around turkey. Add bay leaf, juniper berries and remaining thyme sprigs to the roasting pan and let cook in the oven for another 45 minutes.

Remove turkey from the oven, let cool briefly and serve sliced.
