40 grams slivered almonds
2 Tbsps balsamic vinegar
150 milliliters Beef broth
300 grams Strawberries
1 splash lemon juice
1 tsp honey

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the pork loin and pat dry. Season with salt and pepper. In a skillet, heat the oil and sear the pork on all sides. Transfer to a roasting pan and roast for about 50 minutes. During the last 20 minutes of roasting time, baste with the butter and sprinkle with the almonds.

Pour the fat from the roasting pan. Deglaze the pan drippings with  the balsamic vinegar and the broth.

Rinse, stem, and quarter the strawberries. Set aside 1/3 of the berries for a garnish and add the rest to the pan.

Simmer the strawberries in the pan sauce until soft, about 10 minutes. Purée the sauce and return to a simmer. Adjust the texture (simmer a few more minutes to thicken the sauce or add a little broth to thin it). Stir in the honey and season with salt, lemon juice, and pepper.

Carve the pork into thin slices.

To serve, arrange the sliced pork loin on a plate and drizzle with a little sauce. Garnish with remaining strawberries and serve the remaining sauce on the side.
