- 21 ozs pork fillets
- salt
- peppers
- 1 tsp chopped marjoram
- 2 Tbsps Oil
- ⅔ cup Bacon (thinly sliced)
- 5 cups Rutabaga (or turnip)
- 1 Tbsp butter
- 1 Tbsp sugar
- 2 Tbsps balsamic vinegar
- 1 ⅓ cups stock (turkey or vegetable)
- 2 Tbsps chopped Chives

Preparation steps
1.
Heat the oven to 180C,350F, gas 4.

Rub the pork with salt, pepper and marjoram.
3.
Heat the oil in a frying pan and cook the bacon until crisp. Remove from the pan. Add the pork fillet to the pan and quickly brown on all sides. Place the pork in a roasting tin and cook for 20 minutes.

Heat the butter in the frying pan and add the swede, a seasoning of salt and pepper and sprinkle with sugar. Cook until caramelised slightly, stirring. Add the balsamic vinegar and stock, cover and simmer for about 25 minutes until tender. Stir in the bacon.
5.
Place the pork on a serving plate and cut into thick slices. Spoon the swede mixture on the plate and sprinkle with chives.
