4 Rack of lamb (about 350 grams or about 12 ounces, ready to cook)
salt
freshly ground peppers (from the mill)
2 Tbsps vegetable oil
2 sprigs rosemary
2 garlic cloves
1 egg yolk
4 Tbsps melted butter
3 Tbsps White bread crumbs
2 Tbsps medium-hot Mustard

Preparation steps

1.

Preheat the oven to 140°C (approximately 275°F).

Rinse the meat, pat dry and season with salt and pepper. Sear in hot oil on all sides.Place on a roasting rack over a drip pan, and cook in the preheated oven for 25-30 minutes.

Rinse the rosemary, shake dry, pluck and finely chop. Peel the garlic and chop finely. Mix with the egg yolks, rosemary, butter and breadcrumbs.

4.

Spread the mustard on the lamb followed by the herb mixture about 15 minutes before end of cooking. Return to the oven and continue to cook.

5.

Remove from oven, let rest for a few minutes, slice and serve with side dishes as desired.
