- 36 ozs boneless Beef rib (rolled and tied)
- 2 tsps Oil
- 2 tsps salt
- 2 tsps peppercorns (lightly crushed)
- 3 tsps freshly chopped thyme
- 3 tsps chopped Sage
- 3 tsps chopped Chives
- 3 tsps parsley

Preparation steps
1.
Heat the oven to 350°F.
2.
Rub the oil into the beef. Mix together the salt, peppercorns and herbs.
3.
Spoon the herb mixture onto the beef and spread it evenly to cover all sides.
4.
Put the oil in a large roasting tin and add the beef joint. Roast for 1 1/2 hours for medium, less for rare and longer for well done meat.
5.
Leave to rest for 10 minutes before carving.
