- For the roast
- 1 ½ kilograms Fresh ham roast (cured)
- 4 Tbsps honey
- 4 Tbsps lemon juice
- ½ tsp ground ginger
- 1 pinch cayenne pepper
- 1 Tbsp vegetable oil
- 200 milliliters Beef stock
- 1 kilogram small potatoes
- 150 grams Pesto (from a jar)
- salt
- thyme (for garnishing)

Preparation steps

Rinse meat, pat dry and tie, if necessary. Whisk together honey, lemon juice, ginger and cayenne pepper. Heat oil in a roasting pan and brown meat on all sides on high heat. Add stock to the pan and baste meat with some glaze. Roast in preheated oven at 200°C (approximately 400°F) for about 90 minutes, basting with glaze often.

While meat cooks, scrub potatoes and cook for 20 minutes in boiling salted water. Cut crosswise and top each potato with a little pesto. Bake in preheated oven at 200°C (approximately 400°F) for about 5-10 minutes. Cut meat into thin slices. Arrange meat and potatoes on plates, garnish with thyme and serve.
