600 grams Roast beef (ready to cook, trimmed)
salt
freshly ground peppers
2 Tbsps vegetable oil
50 grams Mayonnaise
2 Tbsps Whipped cream
2 Tbsps Apple juice
1 tsp lemon juice
1 Tbsp green peppercorns
2 Tbsps freshly chopped parsley
350 grams Parsnips
2 tart Apple

Preparation steps

Preheat the oven to 140°C (approximately 300°F).

Rinse beef, pat dry and season with salt and pepper. Heat oil in a roasting pan and fry beef on all sides until brown. Depending on meat thickness and desired doneness, cook in the preheated oven for 40-50 minutes (pink core temperature should be 55-60°C or approximately 130-140°F). Remove from oven and let cool.

Mix mayonnaise in a bowl with sour cream and lemon juice until smooth. Add peppercorns and parsley and season with salt. Peel parsnip and grate. Rinse apples, quarter and remove core and also grate. Add parsnip and apple to the bowl and mix. Serve sliced roast beef on a platter with creamy apple sauce.
