35 ozs angus Beef
2 Tbsps sunflower oil
2 Tbsps mild Mustard
1 tsp Chili flakes
1 ½ cups almonds (chopped)
For the sides
7 ½ cups Beans
2 Tbsps sunflower oil
3 Tbsps butter
5 cups cooked potatoes (peeled and sliced)

Preparation steps

1.
Heat the oven to its lowest setting.
2.
Season the meat with salt and ground black pepper and fry in hot oil on a high heat. Remove from the pan and brush with the mustard.
3.
Mix the chilli flakes with the almonds and sprinkle on the meat. Place on a baking tray and roast for approx. 45 minutes (depending how you prefer your meat).
4.
Blanche the beans for approx. 6 minutes until al dente. Quench and drain.
5.
Heat the oil and 1 tbsp butter in a hot pan and fry the potatoes for approx. 8 minutes until golden brown. Season with salt and pepper. Sauté the beans in the remaining hot butter and season with salt.
6.
Remove the meat from the oven, leave to rest, then slice and serve with the potatoes and beans.
