For the beef
800 grams Roast beef
1 Tbsp clarified butter
salt
freshly ground peppers
1 bunch Arugula
For the sauce
200 grams shallots
2 Tbsps butter
400 milliliters dry Red wine
salt
freshly ground peppers

Preparation steps

1.

For the sauce, peel shallots and cut into rings. Heat the butter in a pan and saute the shallots until translucent. Add the red wine and reduce by half. Season with salt and pepper.

For the beef, sear the roast in a very hot, ovenproof skillet with butter on each side until brown. Then transfer the roast to an oven preheated to 140°C (approximately 285°F) for about 30 to 40 minutes. Remove and season with salt and pepper. Tent the roast in foil and let rest for 5 minutes.

Cut the roast into slices and serve with red wine sauce on a plate.
