Rich Molten Cakes
Heat the oven to 200°C (180° fan) 400°F gas 6. Butter 4 individual pudding basins.
Break up the chocolate and put into a heatproof bowl with the butter. Place the bowl over a pan of simmering (not boiling) water until the chocolate has melted. Remove from the heat and allow to cool slightly.
Mix in the sugar, then the eggs, one at a time, followed by the vanilla extract and finally the flour.
Divide between the pudding basins and place on a baking tray. Cook for 10-12 minutes until risen and fairly firm to the touch, although the insides will be melting. Leave to stand for 1 minute before turning out onto serving plates. Sprinkle lightly with sugar.
