Preparation steps
1.
Place the rice paper between 2 damp cloths and soak.

Rinse vegetables, trim, peel and cut into 8-10 cm (approximately 3 inch) long sticks. Cut sheets of rice paper in half. Form mixed vegetables into small bundles and secure with chives or scallion green. Roll in the rice paper. Serve spring rolls with soy sauce or other savory sauce to taste.
