350 grams Rice noodles
300 grams peeled and deveined, tail on King prawn
4 red scallions
1 red chili pepper
1 garlic clove
150 grams Daikon radish
1 handful Sprout
2 eggs
2 Tbsps light soy sauce
2 Tbsps Peanut oil
40 grams chopped Peanuts
1 Tbsp Fish sauce
1 handful cilantro

Preparation steps

1.

Prepare rice noodles according to package instructions.

Rinse the shrimp and pat dry. Rinse and trim the scallions. Cut the white part into rings and the green in 4-5 cm (approximately 1 1/2 inch) pieces. Rinse chile, remove seeds and ribs and chop. Peel garlic and radish and finely chop. Rinse the sprouts and drain well.

Beat eggs with 1 tablespoon soy sauce and pour into the hot wok coated with 1 tablespoon oil. Stir fry briefly, remove from the wok and chop into pieces.

Pour the remaining oil into the wok and fry the chile, garlic and peanuts briefly. Add shrimp and stir-fry. Stir in soy sauce, fish sauce, scallions and radishes and cook 1-2 minutes. Then add the cooked and drained noodles and sprouts and saute briefly.

5.

Finally, add the egg to and sprinkle cilantro on top. Season to taste and serve.
