4 ozs Long grain rice (parboiled)
2 carrots
1 bunch Radish
4 ozs Arugula
1 Orange (or apple)
1 Tbsp Lime juice
½ oz parsley
salt
peppers
10 ozs chickpeas (drained weight)

Preparation steps

1.

Soak the cashew nuts in 4 ounces of water. Cook rice in boiling salted water according to package instructions.

2.

In the meantime peel and grate the carrots. Clean, wash and slice the radishes. Clean, wash and dry shake the arugula, peel and chop the orange.

3.

Wash parsley, shake dry and chop finely. Puree cashews with soaking water, lime juice and parsley and season with salt and pepper.

4.

Arrange rice, salad, carrots, radishes, chickpeas and fruit in bowls (bowls) and serve drizzled with the sauce.
