6 ozs Pork loin (chopped)
½ Tbsp soy sauce
½ Tbsp dry sherry
½ tsp Chinese 5 spice powder
1 Tbsp water
½ cup Basmati rice
½ Tbsp vegetable oil
1 scallion (chopped)
1 stalk Celery (sliced)
3 ozs Mushrooms (sliced)
8 Snap pea
1 Lime (juice)
salt
peppers

Preparation steps

1.
Put the meat in a shallow dish. Mix together the soy sauce, sherry, 5 spice powder and water and brush over the pork, coating well. Cover and leave to marinate for 1 hour.

Cook the rice for 10-12 minutes in plenty of lightly salted boiling water until tender.

Heat the oil in a wok or large frying pan. Add the pork and stir-fry briskly for 3-4 minutes.

Add the spring onion, celery and mushrooms and stir-fry over a high heat for 4 minutes.

Add the snap peas and cook for 1-2 minutes. Add the lime juice and season to taste with salt and pepper.

Stir in the rice and put onto 2 warm serving plates or bowls.
