Rhubarb and Yogurt Popsicles
These popsicles are a good source of protein and calcium from the yogurt and antioxidants from the rhubarb.
If you're vegan, you can easily replace the yogurt in this recipe with coconut or soy yogurt.
Put the rhubarb, 5.5 Tablespoons sugar and the grape juice into a pan. Simmer gently for 10 minutes.
Mix together the natural yogurt, lemon juice, vanilla extract and 6 ounces of sugar.
Take 4 molds or espresso cups. Spoon the rhubarb mixture into the base of each one.
Dip the base of each one in hot water to unmold.
