- 1 Red cabbage
- salt
- 200 milliliters red Currant juice (unsweetened)
- 2 Tbsps Raspberry vinegar
- 1 pinch sugar
- peppers
- Chives
- 60 grams Walnut
- 80 grams golden raisin
- 3 Tbsps Walnut oil

Preparation steps

Halve the cabbage, remove the core, and thinly slice. Divide onto 4 plates, sprinkle with salt, and rest for 20 minutes.

Heat the juice in a small saucepan, and reduce slightly. Add the vinegar and 1 pinch each sugar and pepper. Pour the mixture over the cabbage, and rest for 15 minutes.
3.
Rinse and dry the chives, and thinly slice. Top the cabbage with the walnuts and raisins. Drizzle with the oil, and garnish with the chives.
