Preparation steps

1.

Rinse the cabbage, remove the outer leaves and stalk, and julienne. Peel the apple, remove the core, and coarsely grate. Blanch both in boiling water for 10 minutes (the apple may turn red from the cabbage).

Rinse the apple and cabbage under cold water, then drain. Mix immediately with the vinegar.

3.

Rinse and trim the scallions, then thinly slice. Remove the core from the chili and slice.

4.

Mix the oil with the cabbage and apple, then season with salt and pepper. Mix in the chili and scallions, then divide into bowls. Garnish with the sesame seeds.
