Red Cabbage and Apple Dish

- 1 ½ kilograms Red cabbage
- 2 large Apple (such as Boskop)
- 1 small onion
- 2 Tbsps Goose fat
- 1 Tbsp sugar
- ¼ l dry white wine
- 2 Tbsps Wine vinegar
- 2 cloves
- 4 allspice
- 1 bay leaf
- ½ Cinnamon stick
- 100 grams green Grape (seedless)
- 1 Tbsp Grape jelly
- salt
Preparation steps
Cut the cabbage into quarters and remove the stalk. Rinse and cut into thin strips. Rinse, peel and quarter the apples, remove the seeds and finely grate. Peel the onion and chop finely.
Heat the goose fat in a large saucepan and sauté the onions and apples. Dust with sugar and allow to caramelize briefly before deglazing with the wine and the vinegar.
Put the cloves, the allspice, the bay leaf and the cinnamon stick in a spice bag and add to the pan. Pour in about 100 ml of water (approximately 1/2 cup), add the cabbage, cover the pan and simmer for about 45 minutes over low heat.
Meanwhile, rinse and halve the grapes.
Remove the spices from the pan and transfer the apple-cabbage to bowls. Scatter the top with grapes and serve flavored with grape jelly and seasoned with salt.
